Chicken Tortilla Soup


Is there nothing better than an amazing soup on a cold day?

Or, one you eat on a hot day to cool you down.

I was raised in Phoenix AZ. It gets HOT! We ate hot food to cool down. Go figure...

Ingredients


· 2-4 Boneless skinless chicken breasts

· 1 Large onion (Peeled and sliced)

· 1 Can green chilis

· 2 32oz boxes chicken stock

· 6 Cloves garlic (rough dice)

· 2 Tbsp Mexican Oregano

· 1 Tsp cellery salt

· 1 Large jalapeno (Seeded and fine diced)

· 1 Tbsp ground cumin

· 1 14oz can Tomato Sauce

· 1 Can diced tomatoes

· Juice of one lime

· 1/4 cup fresh cilantro

· 1 Avocado large chop (for garnish

· Sour cream (for garnish)

· Salt and fresh cracked pepper to taste

· Tortilla strips (I make myself, but whatever)


Directions


· Sauté onions, garlic, peppers and chilis until soft and translucent. Don't burn.

· Add chicken stock and Chicken.

· Boil forever until tender and shreddable. (About 2 hrs)

· Add remaining ingredients and boil, boil, boil....


It's a play it by taste/texture kinda thing.

EAT AND REPEAT!!!!
