Au Gratin Potatoes
Ingredients:
· 2 Large Russet Potatoes (Peeled and Sliced into ¼ inch slices)
· 2 Large Shallot’s (Sliced into slivers) Set aside for top garnish.
· 1 Large White Onion (Sliced into slivers) Set some aside for top layer of dish.
· 4 Large Cloves Garlic (Fine diced)
· 3 Tbsp Unsalted Butter
· 6 Tbsp AP Flour
· 4 Cups Whole (or2%) Milk
· 4 Cups Shredded Cheddar Cheese. Stet aside ¼ cup for top layer of dish. (I like a mix of Sharp White and Mild Cheddar)
· ¾ Tsp Kosher or Sea Salt
· Fresh Cracked Pepper (to Taste)
Directions:
· Pre-Heat oven to 400 degrees (200 degrees C)
· Butter large Casserole dish.
· Layer potato slices to cover bottom of buttered dish. (slightly overlapping to get full coverage)
· Spread onion, garlic and shallot slices sparsely.
· In a medium-size saucepot melt butter over medium heat. Mix in flour and salt. Stir until smooth with a whisk, about one minute. (Do not burn or darken)
· Stir in milk and whisk until thickened and smooth.
· Stir in cheese while continuing to stir until melted, about one to two minutes. (Salt and Pepper to taste)
· Poor cheese sauce over potatoes to cover and let/help seep into layers of casserole dish.
· Top with remaining cheese, onions and shallots and cracked pepper.
· Cover with foil.
· Bake for 2 hours. (Times may vary)
· Uncover for remaining 15-20 minutes to lightly toast top layer of cheese, etc.
Let cool slightly to set up. Serve and enjoy
